Testo za picu -

Za testo za picu je potrebno:
-5 kg brasna tip 500
-2dl ulja ( ako ima maslinovo još bolje) -5 supenih kašika soli (najbolje morska)
-4 supene kašike šecera
-2,5 litara vode hladne +- 10% zavisi kako koje brasno pije vodu
-20gr kvasca ako je zimski period staviti 40gr ili ceo paketić.
Kada se testo izbuliča kao na videu spakovati ga u najlon kesice svaku bulicu  posebno, izbaciti vazduh i zavrnuti kesicu. Staviti u frižider (idealna temp. 5 stepeni) da odstoji od 12 - 16 sati.Kada je testo spremno za upotrebu može stajati u frižideru 3 dana ili u zamrzivaču do 6 meseci.Vreme odmrzavanja 20 minuta na sobnoj temperaturi i posle normalno raditi sa njim. Ukoliko vam treba brzo testo onda sve ovo radite sa mlakom vodom i duplom količinom kvasca. Ovakvo testo je posle dva sata u frizideru spremno za rad.Ovo brzo testo po meni je slabijeg kvaliteta za pravljenje lepinja i italijanskih piroški jer hoće ponekad da im napravi crne fleke jer nije dovoljno odradilo,dok za pravljenje pizza nema razlike.

Pica con rucola recipe


Pizza con rucola for two to three people

    Composition;

  - 400 grams of dough

Pizza con rucola - recept


Пица кон руцола За две до три особе -рецепт

Састав;

- 400 грама Теста
- 4 супене кашике пица соса
- 150 грама качкаваља
- 70 грама шунке
- 30 грама печенице
- 2 Мања или 1 већи парадајз
- 50 грама руколе
- 40 грама пршуте
- 25 грама пармезана
- 5 Маслина, оригано

Припрема:


Тесто развући на 36 до 38 цм (Рецепт за тесто, пица сос, поступак развлачења и печења имате на претходним постовима на овом сајту), нанети пица сос и равномерно га распоредити , затим нанети 50 грама качкаваља.Наизменично ређати шунку и печеницу .Половину количине парадајза насећи на танке шните и распоредити преко целе површине пице.Посути са 50 грама качкаваља и ориганом.Пећи у претходно загрејаној рерни на 250 степени, док не порумене ивице.
Када је пица готова, распоредити свежу руколу преко, затим преосталу количину парадајза исцепкати пршуту преко целе пице.Посути преосталим качкаваљем и пармезаном.Маслине нарезати на колутиће и декорисати пицу.
Још боље би било узети Грана Падано пармезан у комаду и стругати га ножем за чишћење шаргарепе, преко пице.

PIZZA CON RUCOLA -with crispy zucchini and 23 K gold

On these pictures is pizza CON RUCOLA. I  made it with  23 K gold.Pizza consists of a integral dough and pizza sauce on which is apply mixture of Emmentaler and gorgonzola cheese,then ham, fresh sliced tomato.After baking arrange fresh rucola over pizza, cherry tomatoes, crispy zucchini  made with Parmigiano-Reggiano, then prosciutto, olives and 23 K gold and some grated Grana Padano cheese.These strong cheese are used to mitigate the bitterness of rucola salad.

Na slici je pizza CON RUCOLA koju sam pravio sa 23- karatnim zlatom.Pizza se sastoji od testa koje je rađeno od integralnog brašna,pizza sosa na koji je naneta mešavina ementalera i gorgonzole.Zatim ide šunka,svež paradajz i posle pečenja je naneta sveža rukola,čeri paradajz, crispy (hrskava )tikvica napravljena sa parmigiano-reggiano,zatim pršuta,masline i 23-karatno zlato.Preko svega nožem strugani Grana Padano.Jaki sirevi su korišćeni da bi se ublažila gorčina rukole.

Gyros pizza - recipe


Since I lived with my family and worked for several years in Greece, and my wife worked in a restaurant that sells gyros, I came up with the idea to make a "gyro pizza" .After the reactions of those who have tried, I managed that.

Ingredients for pizza (for 2 persons) :

-400 grams of dough(description kneading dough recipe and video you have on this site).
-2 tablespoons mustard
-Curry, oregano
-70 gr of cheese
-200 gr smoked chicken or turkey fillet
-about 200 gr fries
-two medium tomatoes
-1 head onion
-tzatziki salad
-eight olives

Procedure:

Extend the dough into 36-38 cm.If you want pizza edge as shown on picture, stretch the dough to about 39 cm, and then by 2 cm with your thumb switch to the center of  pizza.All process of kneading and stretching the dough you have on video on this site.
Two tablespoons mustard mixed with 2-3 pinches of curry and oregano.If you  want stronger flavor, add more curry.Add water so much to gain density ketchup.Arrange  over the dough, sprinkle with grated pizza cheese.After, alternately in a circle arrange sliced ​​tomatoes, fries ( previously thawed) and smoked fillet that was cut into strips, arrange over the entire surface of the dough.Oven  heat up to 250 'C, then restore the thermostat to 200' C and throw a pizza to bake.In half of baking verify that the fries inside and over cook,reinforce the oven to 250 'C to all bake.

Italian roll - recipe
     This is my wife's favorite dish since I made her first pierogi,she doesnt eat pizza anymore.Joke a side,this is a very tasty dish, all the ingredients are cooked inside of the dough and have a special taste,very yummy taste like my wife say.

Composition for one pierogi:

- 200 gr of dough
- 150 gr of pizza cheese
- 100 gr mushrooms
- 60 grams of ham
- 2 tablespoons sour cream
- pizza sauce or ketchup
- oregano

   The day before, mushrooms grate and leave in the fridge to dry, it is very important that they are dry because then creates minimal water inside of pierogi during baking.
    Stretch the dough to a thickness of about 1,5 milimeters (the recipe for the dough you have in previous posts on this site ) then make an ellipse of the dough.In the middle of the dough put a line of 100 gr of pizza cheese.Put a ham over a pizza cheese and finally cover ham with mushrooms.
     With both hands to catch and fold the dough over the filling so you connect the edges of dough.With yor fingers  well press  the edge where the dough came together.
    With a knife, remove excess dough, so  stay seam approximately 5 mm.
    The dough is  from pressing probably stuck to the surface on which you are making pierogi, push the knife and gently peel off the lining of the pierogi. Take with
both hands pierogi for seam or where the dough is connected to the upright position, so that the seam is up.
Oven heat to 250 degrees, immediately
before insert pierogi thermostat back to 200 degrees.     I got the idea to make a pizza that is effective, tasty and relatively cheap.I think I made it and you judge.

Material required for two people:

-400 grams of dough
-3 tablespoons of crumbled white cheese
-1 tablespoon of sour cream
-2  fresh tomato
-1/2 peppers
-70 gr bacon
-oregano
-basil
-5 olives

Preparation:

Pizza Quattro formaggi - recipe


   This simple pizza delight your
taste that simply diffuses through the mouth when you bite a slice of pizza.

Composition - for two persons:

-400 Grams of dough for pizza (dough recipe on this site)
- 4 tablespoons  pizza sauce
-150 gr of cheese
- 50 gr Emmentaler
-50 gr gorgonzola
-80 gr mozzarella
-oregano
-olives

Stretch dough to 36 cm in diameter, apply pizza sauce evenly and uniformly arrange.Ementaler grate over pizza and then 100 gr of cheese and gorgozola, sprinkle with oregano.
    In a preheated oven at 250 degrees insert pizza to bake.On a half baking take out pizza  and if there is a lot of fat of cheese, queries with kitchen paper.Mozzarella divide into 8 pieces and align uniformly in a circle around the pizza to be on every piece when you cut.
  Return pizza to the oven to finish baking .When browned edges pull out from the oven, garnish with olive and serve.

Homemade flatbread - recipe


     Fantastic homemade bread without additives I  studied long years.Now  I present to you the recipe for them:

- Composition for 16 flatbread:

- 2 kg of flour type 500
- 0.5 dl oil
- 10 g butter
- 20 gr fresh  yeast
- 2 tablespoons salt
- 1.5 tablespoon sugar
- 1 liter water + - 10% depends on how much flour drink water (depending on flour)
   If making with black flour, then the ratio of flour white and black 1: 1

- Preparation:

  Since I bake in much greater quantities and in the mixer now I've adapted the recipe and method for home use.
   Melt margarine, yeast raise in 2 dl lukewarm water with sugar.Salt dissolve in 2 dl of cold water. In bowl pour the flour, then pour the oil and margarine, stir and pour the yeast into the flour, stir and add a dissolved salt. Now knead, gradually adding water until you add 0.9 liters
of water. Knead until the dough structure as when your chewing gum in the mouth.
   Make  balls of 200 gr and lubricate them with oil. Every ball place especially in a plastic bag, out the air from bag  and put in refrigerator.Dough should be in the refrigerator to rest for 12 - 16 hours.
    Take balls from the refrigerator and  stretched to a thickness of about 1 cm and leave to stand for 15 min., to stabilize the structure of dough. Optionally smear egg and sprinkle with sesame or sunflower.
    In the preheated oven to 250 degrees put flatbread and bake until golden brown, about 10 min.When  make the flatbread
covered with a cloth and hold them 15 minutes .
   Make sendwiches  as desired.

Pizza with eggs-recipe


     I made ​​one more effective, delicious,
easy to make and cheap pizza, which is very important for the time in which we live.

Pizza with eggs, composition for two persons:

-400 Grams of dough for pizza
-30 gr of cheese
-4 tablespoons of sauce for pizza
-5 eggs
-40 gr ham
-5 mushrooms
-1/2 tomato
-1 pepper
-5 olives
-30 g of sweet corn

Preparation:

   Stretch pizza dough to about 39 cm (recipe for the dough and procedure strength you have in previous posts on this site) .When you stretch the dough by 1.5 cm test finger come back in a circle to the center of the pizza and the way you described in the video, this is very important for the reason that pizza gets a little bigger rim and thereby prevent leakage of the egg.

   Sprinkle with a little oregano and bake in preheated oven at 250 degrees until well browned edges.
    Cut olives into slices and garnish pizza.
     This Pizza can be comfortably and for three persons. I was looking to combine the ingredients to be a little of everything and eggs and meat and vegetables all of which together enough for one meal.

Pizza sauce

Pizza Sauce 1
Ingredients:
-800 gr ripe tomatoes
-2 cloves garlic
-origano
-salt, pepper, sugar
-2 tablespoons tomato concentrate.
In oil fry the garlic until golden brown, add blended mature tomato.Put over low heat, stir the spoon. Put salt, pepper, add 2 tablespoons of double concentrate tomato, previously mixed with oregano. Add sugar  to kill the bitterness and acidity of the sauce.

Use it as a spread for pizza dough and sauce as for a variety of pastas.

Sauce for Pizza 2

Ingredients:
-can of peeled tomatoes (canned tomatoes) has them in packages of 250 gr, 400 gr, 800 gr, 2.5 kg

Blend peeled tomato and put double  concentrated tomato.Put  the same amount of peeled tomato and concentrated tomato, who previously mixed with  oregano. Mixed with salt, pepper and stir with water, until a density as ketchup.

Domaće tortilje - recept

Domaće tortilje recept :
- Sastav za 32 tortilje
- 2 kg brašna tip 500
- 0.5 dl ulja
- 10 gr margarina
- 20 gr svažeg kvasca
- 2 supene kašike soli
- 1,5 supena kašika šećera
- 1 litar vode + - 10 % zavisi koliko brašno    popije vode ( zavisi od brašna )
   Ako pravite sa crnim brašnom onda je odnos brašna belog i crnog 1:1
- Priprema
  Pošto ja mesim u mnogo većoj količini i
u mešalici sada sam vam prilagodio recept i
postupak za kućnu upotrebu.
   Margarin rastopiti, kvasac podići u 2 dl mlake vode sa šećerom.So rastopiti u 2 dl hladne vode. U vanglu sipati brašno, zatim sipati ulje i margarin, razmutiti kvasac i sipati u brašno,malo promešati i dodati razmućenu so . Sada mesiti uz postepeno dodavanje vode sve dok ne dodate 0.9 litara
vode. Mesiti dok ne dobijete testo strukture kao kad vam je žvaka u ustima.
   Kada je testo gotovo napraviti bulice ( kuglice ) od 200 gr i namazati ih uljem . Svaku bulicu staviti posebno u kesicu izbaciti vazduh zavrnuti kesicu i staviti u frižider.Testo treba u frižideru da odstoji
od 12 - 16 sati.
    Tiganj od 18 cm podmazati uljem i zagrejati na ne mnogo jakoj vatri .Izvući testo iz frižidera podeliti bulicu od 200 gr na dve od 100 gr, razvući testo u krug debljine oko 1,5 mm i položiti  ga u zagrejani tiganj.Peći sa jedne i sa druge strane dok ne porumeni.Gotove tortilje ređati jednu na drugu i zatim pokriti krpom.
Sve zajedno uvijene sa krpom staviti 15 min
u najlon kesu.
   Filovati po želji.

     Fantastične domaće lepinje bez aditiva usavršavao sam dugo godina.Sada vam predstavljam recept za njih:
- Sastav za 16 lepinja
- 2 kg brašna tip 500

- 20 gr svažeg kvasca
- 2 supene kašike soli
- 1,5 supena kašika šećera

Italijanske piroške - recept

     Ovo je omiljeno jelo moje supruge, od kada sam joj napravio prvu pirošku više ne jede pizze.Šalu na stranu ovo je veoma ukusno jelo, svi sastojci su kuvani u testu i imaju poseban ukus.
Sastav za jednu pirošku :
- 200 gr testa
- 150 gr kačkavalja
- 100 gr pečuraka
- 60 gr šunke
- 2 kašike pavlake
- sos za pizzu ili kečap
- origano
   Dan ranije pečurke narendati i ostaviti u frižideru da se suše , jako je bitno da su suve jer se tada stvara minimalno vode u piroški prilikom pečenja.
    Testo razvući na debljinu od oko 1,5 mm
( recept za testo imate u prethodnim postovima na ovom sajtu ) zatim od testa napraviti elipsu u sredini testa ravući liniju od 100 gr kačkavalja.Šunku rasporediti preko kačkavalja a preko šunke pečurke.
     Sa obe ruke uhvatiti testo i preklopiti preko fila tako spojite ivice testa.Prstima dobro ispritiskati ivicu gde se testo spojilo.
    Nožem odstranite višak testa tako da vam ostane šav otprilike 5 mm.
     Pošto se testo sada zbog pritiskanja verovatno zalepilo za podlogu na kojoj pravite pirošku, podvucite nož i lagano odlepite pirošku od podloge. Uhvatite sa
obe ruke pirošku za šav, odnosno tamo gde je testo spojeno i uspravite je tako da spoj bude na gore.Ja, radi estetike isprepletano ispritiskam spoj,a vi ga možete samo ispritiskati još jednom.
Rernu zagrejati na 250 stepeni, neposredno
pre nego ubacite pirošku termostat vratite na 200 stepeni. Pecite dok piroška ravnomerno ne porumeni.Gotovu pirošku servirate tako što je premažete pavlakom,
zatim ravnomerno nanesete preostali kačkavalj, prelijete kečapom ili sosom za pizzu što je po meni još lepše ( recept za pizza sos imate u prethodnim postovima na ovom sajtu ), pospite malo origana preko piroške i to je to.

Pizza " Do Jaja " recept

     Napravio sam još jednu efektnu, ukusnu,
jednostavnu za pravljenje, i jeftinu pizzu, što je jako bitno za vreme u kome živimo.
Pizza "Do Jaja " sastav za dve osobe :
-400 gr testa za pizzu
-30 gr kačkavalja
-4 supene kašike sosa za pizzu
-5 jaja
-3 lista suvog vrata
-5 pečurki
-1/2 paradajza
-1 paprika
-5 maslina
-30 gr kukuruza šećerca
Priprema :
   Testo za pizzu razvući na oko 39 cm         ( recept za testo i postupak razvlačenja imate u prethodnim  postovima na ovom sajtu ).Kada ste razvukli testo po 1,5 cm testa prstom vraćajte ukrug prema centru pizze i to tako kako vam je opisano u videu " razvlačenje testa "ovo je jako bitno iz razloga da pizza dobije malo veći obod i da se time onemogući curenje jajeta.
     Na razvučeno testo naneti 4 supene kašike sosa za pizzu i ravnomerno ga rasporediti.Odvojiti jednu veću kapicu od pečurke poravnati je i postaviti u centar pizze.Suvi vrat iseći na 4 dela, isečene delove urolati i postaviti po pizzi u 4 linije u obliku krsta i to od ivice pizze do kapice od pečurke.Na ovaj način smo dobili 4 trougla.
     Pečurke iseći nožem na listove debljine 2 mm i rasporediti ravnomerno po obodu testa.Papriku iseći na kolutove, 4 veća koluta staviti ponaosob u sredinu svakog trougla.Preostale kolutove paprike i paradajz poređati naimenično između pečuraka na ivici testa.Po jedno jaje staviti
u papriku u svakom trouglu i jedno jaje staviti u kapicu od pečurke na sredini testa.
    Rendanim kačkavaljem i kukuruzom popuniti prostor gde nema fila na pizzi.
   Posuti sa malo origana i peći u prethodno zagrejanoj rerni na 250 stepeni sve dok dobro ne porumene ivice da bi bilo pečeno jaje.
    Iseći masline na kolutove i dekorisati pizzu.
     Ova pizza može komotno biti i za tri osobe . Gledao sam da iskombinujem sastojke tako da bude od svega po malo i jaja i mesa i povrća što je sve zajedno dovoljno za jedan obrok.

Jednostavne slatke korpice od palačinki i čokolade

     Ispeći 10 palačinki prečnika 18 cm.Na pari u užoj posudi rastopiti 200 gr čokolade.
     Usku a visoku čašu okrenuti naopako,staviti palačinku na okrenutu čašu.Rukom uhvatiti palačinku zajedno sa čašom i umočiti u rastopljenu čokoladu. Izvući iz čokolade malo okretati u vazduhu da se čokolada stegne. Čašu zajedno sa palačinkom ponovo vratiti u isti položaj sa početka postupka i zalepiti jaffa ili neki drugi slatki keks . Ostaviti da se ohladi.Višak palačinki ukloniti ili ostaviti da pada preko čoko korpice.Filovati po želji.
